Ok.....
Recipe time.
1, 12-14 oz package of smoked sausage or the like. Sliced
2 Boneless, skinless chicken breasts
1 Can of diced or stewed tomatoes.
2 1/2 cups h20
3/4 cup of frozen mixed veg (green beans, corn, carrot, peas. Or a can of Veg-all)
5 or 6 okra, sliced about 3/8" thick
3 scallions, chopped
4 cloves of garlic minced
1/3 cup flour
1/3 cup cooking oil
salt, black pepper and Red pepper flakes to season to taste
Blackening seasoning:
I cheat and use Zatarains or I just add to some Old Bay by adding garlic. onion and cayenne powders. The following is a good mix to make up.
2T salt (kosher if you got it)
1 1/2t garlic powder
1 1/2t black pepper
1t white pepper
1t onion pwder
1t cumin (ground)
1/2t red pepper flakes
1/2t paprika
Preperation:
"Roux"
In a 2 qt saucepan, mix the oil and flour and whip until it has an even consistancy. Heat the saucepan up to MED heat and stir constantly for 5 minutes, reduce heat and cook for an additional 10-15, stirring as needed to keep from scortching. When you have a reddish brown color. you should be done. Remove and let cool.
In a crockpot (low heat), add water and mix in the roux.. use the whip to work out any clumping. Add mixed veggies and can of tomatoes along with the okra, scallions and sausage. Add garlic
Chicken Prep:
Using either an indoor grill or a cast iron skillet..... preheat to a good temp to sear chicken breasts. Wash and dry the breasts and spray one side of them with non-stick cooking spray, sprinkle seasoning mixture on the sprayed side (dont be afraid to get a little heavy with the seasoning, this seasons the rest as well) and place seasoned side down in grill or skillet. Treat the "upside" of the chicken breasts with spray and seasoning. Cook the chicken to the point where both sides are well seared. Remove and chop up the chicken into 1" cubes or so. The chicken may very well not be done on the inside yet. Dont worry.... its going crockpot!
Add the chicken to the crock pot and cook for 2 hours before sampling the broth. At this point go ahead and adjust the saltiness or the "heat" with salt, pepper, and pepper flakes.
Cook for at least 4 hours on low or until the veggies are soft.
